A recipe from a listener (Karen) on Saturday morning. Sounds fantastic!
I will be getting some cumquats later this week so will make it immediately and post a photo.
Karen’s Cumquat Upside Down Cake
250g cumquats, cut in half and de-seeded
Mix together and leave to stand overnight.
For the Cake Batter
125g white sugar
2 eggs, beaten’
1 teaspoon brandy
60g self raising flour
70g almond meal
Line base of a small loaf tin with baking paper and spoon in the cumquat/sugar mixture.
Whisk together the oil and sugar, then whisk in the eggs and brandy.
Mix together the salt, self raising flour and almond meal and fold until well combined.
Spoon over the cumquats. Spoon evenly over the cumquats.
Bake at 190 degrees (non-fan forced) for 40 minutes approximately.
