Raspberry “Ice Cream”

Raspberry “Ice Cream” with just three ingredients? You’ve got our attention Sally Wise!

Son, Elliott is following the Paleo diet and suggested that I might like to put together some suitable recipes. So here are my instructions for a Raspberry “Ice Cream” with just three ingredients. I was a bit doubtful about it, but its flavour is divine!

Raspberry “Ice Cream”

225g raspberries, fresh or frozen
1 to 2 teaspoons mild flavoured honey
400ml can coconut cream

Place the raspberries in a small saucepan and heat just to boiling point, then stir in the honey until dissolved. Cool.

Stir in the coconut cream.

Churn in an ice cream machine, then spoon into trays, cover and place in the freezer.

Served for dessert with fresh raspberries from our berry patch
