Chocolate, blackberry and apple cake

It’s been a couple of weeks or more since I baked for the Wednesday morning tea Custard Club. I’ve missed it (bit of an issue with my eyes during this time).

Anyway, this morning back on track; new recipe – well kind of. It is based on one from The Comfort Bake, just the chocolate cake batter part.

Into this batter I mixed loads of frozen blackberries and the last of the Granny Smith apples we picked a couple of months ago (these were cored, peeled and diced).

The mixture shaped up well, though I must be out of practice because I made a dickens of a mess with the beaters – all over the book, up the wall and across the benchtop.

Well you never quite know, or at least I don’t, exactly where the fruit will end up in the final bake. Today it rose, rather pleasingly I think, to the top.

It was served of course with a generous drizzling of nice warm, eggy custard.
