
Here’s the recipe for the onion slice from my last post (it’s been much requested).
ONION SLICE
Ingredients
For the dough:
1½ cups plain flour
1 teaspoon instant dried yeast
¾ teaspoon salt
½ teaspoon sugar
¾ cup warm water
3 teaspoons olive oil
For the topping
500g onions, halved then peeled and finely sliced
1 tablespoon olive oil
300ml sour cream
A little stock powder
Olive oil, extra – to grease tin
Method
To make the dough, mix the dry ingredients together, then make a well in the centre and pour in enough warm water to make a soft dough.
Drizzle the dough with the 3 teaspoons olive oil, cover the bowl with a tea towel and leave to rise until approximately doubled. Mix in the olive oil that was drizzled over the dough.
Meanwhile while the dough is rising, start to make the topping – sauté the onion slices in the tablespoon of olive oil over medium heat for 2 minutes only. Remove and set aside to cool.
To assemble and bake:
Heat oven to 200 degrees C (fan forced).
Turn the dough out onto a lightly floured surface and knead lightly. Press or roll out to fit a tray 25cm x 35cm approximately.
Pour a little olive oil into the tray and spread out. Place the dough on top of this.
Spread with the sour cream and then distribute the onion slices over the top. Sprinkle with a little stock powder (or salt).
Bake immediately for 20 minutes or until the onions are golden and the crust cooked through. Serve hot, warm or cold.
