Zucchini day today. It took us the whole morning to process them.
The zucchinis needed peeling for the most part as the skins had become a bit tough. Then the spongy centre with seeds was scooped out.
Still and all there was enough for a double batch of zucchini relish, one of zucchini pickle and two batches of pickled zucchini slices.
There may not seem to be all that many jars by way of yield, but 5kg zucchini is contained within them.

I made a huge zucchini chocolate tray bake too – that used 4 cups of grated. Several bags of grated were frozen for later use, and finally, finally I made zucchini fritters for lunch.

A bucket and a hlf of zucchini scraps went to the sheep and Cilla the pig for their afternoon tea.
As for the basil, that made 2 batches of regular pesto and the same of a vegan version.

So that’s it for today. The preservers and jam pans are taking a little rest. Not for long however – a kindly neighbour just gave us several kilos of lovely prune plums.

I’m sure the pantry shelves could hold a few jars more of plum jam …..
