Finger Lime Cheesecake Slice
It is a good idea to use a slab tin with a removable base.
The number of finger limes needed can vary according to their size. I used about a dozen for the filling and a few extra for the topping. To use the finger limes, cut each in half and scoop out the “pearls”.
Oven temperatures are fan forced.
For the base
60g salted butter, softened
60g sugar
1 egg yolk
100g plain flour
25g self raising flour
1 egg white, lightly whisked (for sealing the pastry base)
For the finger lime cheesecake layer
395g tin condensed milk
60ml lime juice
60ml lemon juice
250g cream cheese, softened
4 egg yolks
¼ cup finger lime “pearls”
For the topping
300ml cream
1 teaspoon icing sugar
¼ teaspoon vanilla extract
Finger lime pearls to decorate (optional)
METHOD
For the base
Whisk the butter and sugar together, then add the egg yolk and whisk again. Mix with a metal spoon until the mixture comes together (you may need to get your hands into it to make this happen).
Shape into a rectangle, wrap in cling film or similar, and refrigerate for 30 minutes.
Grease and 18 x 28cm slab tin. Heat oven to 160 degrees C.
On a lightly floured surface, and sprinkling the dough with a little flour, roll the pastry out to fit the tin and put in place. Brush surface with the beaten egg white (you may not need to use it all).
Bake for 15 minutes or until light golden brown. Cool.
For the filling
Heat oven to 150 degrees C.
Whisk together the condensed milk, lemon and lime juice and leave to stand for 10 minutes. Whisk in the softened cream cheese and then the egg yolks. The mixture needs to be very smooth. Stand 5 minutes, then mix in the finger lime pearls.
Pour the mixture over the base. Bake until the filling is set, approximately 20 minutes. Remove from oven and cool, the refrigerate for at least one hour.
For the topping
Whisk the cream, icing sugar and vanilla together until medium firm peaks form. Spread decoratively or pipe over the chilled slice and sprinkle with extra finger lime pearls if liked.
Cut into squares to serve.
