Flourless Chocolate Cake

220g dark chocolate, broken into pieces

125g butter, diced

3 eggs

120g sugar

20g cocoa

¾ teaspoon baking powder

190g almond meal

30ml whisky

Finely grated rind 1 lime or orange

Method

Heat oven to 160 degrees C, fan forced. Grease a 20cm round springform tin.  Line base with baking paper and grease again.

Place the butter and chocolate together n a bowl and microwave (medium) stirring every minute, until they are melted and combined.

Whisk in the eggs and sugar, then add the combined cocoa, baking powder and almond meal.  Stir until well combined.

Fold in the whisky and lime or orange rind.

Transfer to the prepared tin and level out.  Bake for 50 minutes approximately until a metal skewer inserted into the centre comes out clean.  Allow to cool in tin.
