A little Saturday morning madness, but then again maybe not…..
The decades long family debate as to whether Anzac biscuits should be crisp or chewy rages on.
This morning an unexpected solution. I’d used sunflower oil in the mixture due to dairy allergy in the family members for whom these were baked.
The result was biscuits with a chewy interior and crispy edges.
It occurred to me that if I used a scone cutter to take out the centre while the biscuit was still warm, then both parties would be pleased – those who liked chewy Anzacs could eat the centre cut-out, the crispy Anzac fans the outer rings.
Unconventional but worked a treat.
Young granddaughter and I discussed if they could technically then be called Anzacs due to the substitution of oil for the butter.
Maybe not, so we have called these biscuits “Cocoaties”. We thought that it represented two of the ingredients and had a nice ring to it (no pun intended).
