Stuffing for Roast Chicken
This amount is sufficient for a medium sized chicken
60g bacon, diced
2 teaspoons olive oil
1½ cups fresh breadcrumbs
1 small egg, lightly whisked
1 small onion, grated
3 teaspoons chopped herbs of choice (such as sage, thyme, parsley)
2 teaspoons finely grated lemon zest
Pinch dried mixed herbs
Pinch of salt
Method
Place the bacon in a small pan with the olive oil and cook over low heat until bacon is just cooked through.
Mix with the remaining ingredients.
Variations:
- Add 1 tablespoon diced dried apricots
- Add 1 tablespoon slivered almonds
