Oh dear, almost forgot it was Wednesday! Come 9.30am yesterday and I suddenly remembered I needed to make something for the Custard Club’s morning tea.
I hastily prepared lemon cupcakes with a dollops of some leftover thickened stewed apple in the centre. I thought that was pretty clever.
I planned a swirl of whipped cream and a dusting of nutmeg on top.
However those best laid plans went awry when the cake batter pulled away from the apple as they baked, most unattractive.
Not only that, they were still too warm to top with cream.
So …. I made custard with the cream instead, and filled the recess in the cakes with it. A sprinkle of nutmeg and a dusting of icing sugar, they didn’t look half bad after all.
So that cake first aid worked pretty well. Who would’ve thought!
For good measure, I also sent some slices of Lumberjack cake.
Hope they liked them.
