Last evening for ABC radio Sydney’s food segment, presenter Renee Krosch chose the topic of warming winter puddings. It was very fitting for the cold and wet weather up there at the moment.
This recipe is by special request – a quickly prepared treat of a self saucing chocolate pudding in a mug, cooked in the microwave.
It can be made in the time it takes for the kettle to boil, truly. This I know as I tested it out and it is really so. I made it for a neighbour who dropped in and fancied a little something sweet to eat with his cup of tea.
The next night he rang and asked if he could call in again, asking if there was any chance of “any more of that yummy chocolate pudding”. It was a simple thing to make him another of course.
Self-saucing Chocolate Mug Cake
55g plain flour
15g cocoa powder
½ teaspoon baking powder
45g sugar
1 egg, lightly whisked
80ml milk
30ml oil (such as canola or vegetable) or melted butter
½ teaspoon vanilla essence
30g chocolate chips (of the melting kind)
Method
Have ready a large mug (400ml capacity approximately).
Place dry ingredients in the mug and mix well.
Combine the egg, milk, oil and vanilla and pour into the mug. Stir with a whisk until well combined.
Fold in the chocolate chips.
Cook on High in the microwave for 1 minute 30 seconds.
Serve with a dollop of ice cream on top.
