Bagels – a great thing to make on a foggy, rainy day in Molesworth

I was inspired by someone else’s post on Facebook this morning, reminding me how good bagels are, so I thought I’d make a batch for lunch.

Once shaped and boiled, then glazed with egg yolk wash, do you think I could find the sesame seeds to sprinkle over? Not likely, even though I know I have a large jar full here somewhere.

Substitute? A sprinkling of Zaatar, after all it contains sesame seeds.

A bonus here is that the wood fired oven is hot constantly, so in no time at all they were baked.

The filling was layered homemade labna (yoghurt cheese), pan sauteed mushrooms and baby spinach, a fried egg and finally some of the Romesco I made a few days ago.

Didn’t wait for the bagels to cool at all, so they could have presented a lot better, but oh my, SO delicious. Because I love Romesco so much I put a big spoonful on top of mine as well, making it challenging to eat with any decorum.

Note to self – make bagels far more often!
