I’ve been trying to make English muffins for decades, ones that I think are up to scratch.
Another try today, developed another recipe for them, and I think these come close. Arguably they are a bit thicker than the usual, so next time I will simply use less dough per muffin.
Other than that I’m pretty happy with them.
Split and toasted with poached eggs for a simple Sunday night dinner or breakfast tomorrow is sounding good.
Btw, they weren’t ready by lunch time today, rising took a bit longer than expected. So I took two pieces of that same dough and rolled each out thinly and made flatbreads/wraps, which also went fine, delicious filled with leftover spiced roast chicken, and salad.
