I’ve had lots of requests for this recipe on my Facebook pages, so am sharing it here as well.
Crumpets
2 cups plain flour
1½ teaspoons instant dried yeast
½ teaspoon bicarbonate of soda
¾ teaspoon salt
1 teaspoon sugar
1 cup warm milk
1¼ cups warm water, approximately
¼ teaspoon bicarbonate of soda, dissolved in a little warn water, extra
Method
Combine the flour, yeast, ½ teaspoon bicarbonate of soda, salt, sugar, milk and enough of the warm water to make a batter-like consistency.
Cover bowl and leave to rise for 45 minutes. Mix in the extra bicarbonate of soda/water mixture.
Place a large frying pan on a hotplate, medium heat, and place greased crumpet rings in this. For 10cm rings, spoon in about ½ cup batter (1/3rd cup may be sufficient, depending on size of your rings).
Wait for bubbles to appear and then to pop, reducing heat to medium low once this process begins. You can assist the breaking of the bubbles once the top is almost set by inserting a toothpick or skewer into each of them as they begin to appear.
At this point you can flip the crumpets over, or do as I did, and cover the pand with a lid with its underside greased.
Repeat with remaining mixture.
For me, this recipe made 6 x 10cm crumpets.
