Inspired by a recipe I happened across yesterday, I was up bright and early to make this cake for the regular Wednesday morning tea platter.
Well actually, it ended up quite different to the original.
The Wednesday morning tea-ers are not keen on things too sweet, so instead of icing I spread the top with a layer of custard, as well as the ‘poke cake’ effect of columns of custard within. It was then dusted with just a little nutmeg.
YUM – a not too sweet version of sticky date pudding, and there’s very few people who don’t like a warm custard cake of any description.
It could also be served as a dessert.
This one is certainly going to be a new family favourite. It’s a bit laborious to make, but every bite makes the effort worth it.
