Wednesday morning tea platter. Banana muffins filled with a swirl of rich egg custard. (They do so like custard.)

I wanted to add a swirl of cream too, but although the bottle in the fridge was before its use by date, it smelled a little suspect. (Cilla our pig will enjoy it at least).
Not to be deterred I made a cream cheese substitute, flavoured with lemon, vanilla and a little icing sugar. I made a teaspoon sized recess in the bases and filled each with some of the mixture.
They were well received, pronounced delicious, so I’m very happy.
