    Hi Sally
    I love your slow cooker recipe book and everything I’ve made has been fabulous except…. my corned beef always comes out tough.

    I’ve followed the recipe faithfully but it’s never quite right. Can you offer any tips please?

      Hi Megan – I think that maybe you just need to cook it a bit longer. Meat varies so sometimes for no apparent reason it needs longer – can depend on your cooker too. ONe principle of slow cooking is always to allow plenty of time (a quote from Margaret Fulton on the subject). I’d try next time giving it an extra hour or two. I have some slow cookers here that are really really slow, while others slow cook much ‘faster’. Hope this helps Megan. Regards, Sally
