Now they say that all good things come to those who wait, and today I know that’s true. That citric acid yeast has finally started to work – with a vengeance. It wasn’t thrown out more by neglect than design. I really thought it was no good.
However, within the past day, this is what started to happen in the jar – bubbles and much frothing.
So now I’m on to the next step (more potato boiled up, extra citric acid mixed with flour and a little sugar). It’s now sitting in a larger container, bubbling away beautifully.
Mavis’s recipe says to now treat the mixture the same as the hop yeast bread – that is to mix some of the yeast mix to a sponge with more flour, then tomorrow morning mix to a dough, rise and bake.
The advantage of this recipe is that you don’t need to find hops.
So if you have the patience to wait those extra few days for this yeast to work, and if Mavis is agreeable to my sharing the recipe around, I’ll put it up in a post it tomorrow.
