Snow at 6am today, very pretty indeed.
Just the morning to do a little baking to take into Hobart. First those lovely bran muffins (here shown ready to be baked),
and then a little kiwi fruit jam as an optional extra to serve with them.
The fruit was given to me by a friend on the Tasman Peninsula, grown in her own garden. They were so sweet and delicious, not at all like the ones available commercially.
Only a few remained after we’d eaten our fill of them fresh, but the flavour and colour of the jam was pretty amazing.
For those who would like the recipe for the jam, here it is:
Kiwi Fruit Jam
1kg peeled kiwi fruit, diced
2 tablespoons lemon juice
900g sugar
Place the kiwi fruit and lemon juice in a small jam pan or large saucepan and bring to the boil, stirring. Simmer for about 10 minutes until the kiwi fruit is soft.
Add the sugar and bring to the boil, stirring. Boil briskly over medium heat until setting point is reached.
Pour into warm sterilised jars and seal immediately.
