ABC Talkback recipes – Forcemeat balls and Boiled Fruit Cake – Nougat to be posted tomorrow

Forcemeat balls

Makes 18, approximately

1 small onion, peeled and finely grated

300g chicken mince

3000g turkey mince

60g bacon, finely diced

1 cup fresh breadcrumbs

1 egg, lightly beaten

3 teaspoons soy sauce

3 teaspoons Worcestershire sauce

2 teaspoons chutney

3 teaspoons tomato sauce

¾ teaspoon salt

Peel and grate the onion and very finely chop the celery.  Place in a mixing bowl with the rest of the ingredients (except the oil for cooking) and mix well.  Shape into balls the size of a large walnut.

Place meatballs around turkey during last 30 minutes of cooking, turning once.


Basic Boiled Fruit Cake

Ingredients

125g butter, diced

375g  to 500g mixed dried fruit

1 cup sugar

1 teaspoon mixed spice

1 cup water

½ cup brandy, rum or whisky

1 teaspoon bicarbonate of soda

2 eggs, lightly whisked

1 cup plain flour

1 cup self raising flour

Method

Heat oven on to 160°C.

Grease a 20cm deep-sided round tin and line base with baking paper.

Place the butter, sugar, spices, bicarbonate of soda and sherry in a large saucepan.

Bring to the boil and simmer for one minute.

Remove from heat and allow to cool for 20 minutes.

Stir in the eggs and then add the flours and mix well.  Transfer the mixture to the prepared tin

Bake for approximately one hour until a skewer inserted into the centre conms out clean.

Leave to stand in the tin for 10 minutes, then turn out onto a wire rack to cool.
