I made tis cake a week or tow ago, and it has proven to be very popular.
Here is the (much requested) recipe for anyone who would like it.
Dorset Apple Cake
650g apples; cored, peeled and thinly sliced
2 tablespoons lemon juice
180g butter, softened
180g sugar
3 large eggs
50ml milk
230g self raising flour
½ teaspoon mixed spice
½ teaspoon ground cinnamon
1 teaspoon baking powder
For the topping (optional)
40g butter, melted
3 teaspoons sugar
1 teaspoon ground cinnamon
Method
Heat oven to 170 degrees C (fan forced). Grease a slab tin approximately 18cm x 28cm, 2.5cm deep, and line base with baking paper.
Mix apple slices and lemon juice together and set aside.
In a separate bowl, whisk together the butter and sugar and then whisk in the eggs, one at a time. Stir in the milk,
Sift together the flour, spices and baking powder and fold into the wet mixture until well combined.
Spread half of the mixture into the prepared tin. Cover with half of the (drained) apple slices. Cover with the remaining cake batter, then the rest of the apple slices.
If desired, add the topping made by brushing the top layer of apples with the melted butter and sprinkling with the sugar and cinnamon.
Bake for 30 minutes until cooked through.
