Chicken Chow Mein
Serves 4
1 tablespoon honey
2 tablespoons dry sherry
½ teaspoon Chinese 5 spice powder
½ teaspoon sesame oil
1 tablespoon soy sauce
1 tablespoon vinegar
2 teaspoons Mirin
2 teaspoons oyster sauce
2 tablespoons rice bran or peanut oil
450g chicken breast, cut into 1.5cm cubes
1 teaspoon grated green ginger
2 cloves garlic, crushed
1 red capsicum, deseeded and cut into 2cm chunks
2 onions, cut into eighths and segmented
1 stick celery, sliced
200g small zucchini, halved and cut into 1cm slices
150g cauliflower florets
90g snow peas
Mix together the honey, sherry, 5 spice powder, sesame oil, soy sauce, vinegar, mirin, tomato sauce and oyster sauce. Set aside.
Heat the oil over high heat and sauté the chicken in until it changes colour. Add the ginger, garlic, onion, celery, zucchini and cauliflower and toss together for 2 minutes. Add the sauce mixture and toss together with a large spoon or spatula. Cook 2 minutes, then stir in the snow peas. Cook 2 to 3 minutes more.
Serve over steamed rice or noodles.
