What manner of orange is this?

Fancy that – Seville Oranges, grown in one of the local backyard gardens.

What to do with them? Marmalade is the obvious choice, but I’m going to make cordial syrup and see how that goes. I think it would be nice, not only as a drink, but as a flavouring for ice cream and cheesecakes.

      Hi Nicci – this is how it goes.

      1.5kg sugar
      1 tablespoon citric acid (available from supermarkets)
      1 litre boiling water
      6 Seville oranges (medium sized) – finely grated rind and juice
      Juice and finely grated rind 1 lemon

      Method – add the boing water to the sugar and citric acid and stir to dissolve. Add the rinds and juices and leave to stand for several hours. Strain through a fine sieve and pour into sterilised bottles and seal immediately. Refrigerate after opening.

    Thank you for the recipe, the Seville oranges have only just come into my local market in Shrewsbury. I am just off to buy some and make it before I leave for Melbourne next week.
