So – did a little baking during the night. Just brought these down from the cooking school kitchen.
The hop/potato yeast features as the rising agent in most. My goodness, that yeast was very active – must have been the warm, sultry weather overnight.
Foccaccias also – crisp and lovely with ample olive oil and salt.
Some of the loaves will make their way out onto our roadside stall, for sale, later this morning. By 10.30 I will be sure to have them on a little trolley under the trees, directly opposite the preserves stand.
Bargain price today – for these huge loaves a mere $5 each.
